Food expert says you should avoid the pasta in in-flight meals

Plane food is not usually praised by passengers for being gourmet – though some business seat dishes may be expertly created.

For those of us who always sit in economy the options are often pasta, a sandwich or maybe a risotto if you’re lucky.

However, they’re often fairly bland or even unhealthy due to the pressure of the cabin affecting how we taste things.

A flight attendant explained: “Most of us aren't aware of this, but when we are at cruise, the air pressure in an airliner is equal to about 8,000 feet above sea level."

“In addition to making your ears pop, it causes our taste buds and sense of smell to go partially numb, compared to on ground.

“Because of this phenomenon, airline catering adds lots of salt, spices, and fat to make food taste less bland."

But, a food expert has claimed that its not taste that the airlines focus on most.

Fritz Gross, director of culinary excellence at LSG Sky Chefs Asia Pacific, told CNN said: "Our top concern is actually food safety.

“We do such a large volume, we cannot afford to have things in there that are not right. You can imagine how easily an airline can get sued."

He added that food that’s easiest to be reheated is the best because it means the food will be properly cooked when served.

This is why pasta is often lacklustre when flying because its texture suffers when reheated.

Anything that needs very fresh ingredients won’t work either as the food needs to be sourced ahead of time rather than on the day.

If you’re looking for the best option, Fritz noted that you should choose a stew if it’s on the menu.

He noted: "We can simmer it and reheat it over and over and it will still be a stew."

Flight attendants recently revealed that they avoid eating the in-flight food when working.

Amber, an air hostess who has been flying for a US airline for years claimed that "airline meals are extremely unhealthy".

She said: "I typically bring my own food: light sandwiches or pasta salad.”
